How to cook Ptitem, Israeli couscous so it doesn’t turn into frogspawn

I find the best way to do ptitem, is to fry it in hot oil, like bulghur or regular couscous and then pour in chicken broth, boil until its nearly but not quite all absorbed, sieve off the excess quickly abd dump back into the hot pan. Stir vigorously so it doesn’t clump and shake vigorously too.

Serve now or make taboule.

I hate it when ptitem turns into frogspawn, well its a bit like semolina.
